Green Falafel with Baba Ganoush


Ingredients:
4 cups torn collard greens organic
15 oz can chickpeas organic. rinsed and drained
3 garlic cloves chopped
2 Tbsp tahini
2 Tbsp fresh lemon juice
1/2 tsp ground cumin, salt and pepper to taste
3 Tbsp almond flour
4 Tbsp olive oil for cooking
1 container Baba Ganoush for dipping, smoked paprika for presentation

Instructions:
  • Add collard greens, chickpeas, garlic, tahini, lemon juice, cumin, salt and pepper to a food processor and mix to combine
  • Once well incorporated, transfer to a mixing bowl and stir in flour 1 Tbsp at a time until the mixture is thick enough to handle
