Grilled Wild Salmon with Onion Marmalade over Greens


Ingredients:
2 medium red onions, thinly sliced
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp sea salt
1/2 tsp freshly ground black pepper
4 fillets wild-caught salmon, 4-6 oz. each
8 cups fresh arugula
1/4 cup chopped fresh parsley
juice of half a fresh lemon
1 lemon, cut into wedges


Instructions:
  • Heat the grill or preheat a grill pan to medium heat.
  • In a bowl, mix together the onion, olive oil, vinegar, and half the salt and pepper.
  • Place the onions in the middle of a large piece of foil; crimp it closed and place it on the grill or grill pan.
