Pegan Chia Seed Pudding

1 cup unsweetened almond milk
¼ cup chia seeds
2 Tbsp 100% pure maple syrup
1 tsp pure vanilla extract
Paleo Krunch granola
Unsweetened coconut flakes
Slivered almonds

  • In a medium mixing bowl, combine the almond milk, chia seeds, maple syrup and vanilla. Whisk well, breaking up any chunks of chia seeds
  • Cover and place in fridge overnight or for at least 4 hours
  • Transfer into serving dishes and top with granola, almonds and fruit
