Recipe: Homemade Coconut Bobo's Bars


Ingredients:
1 cup old fashioned oats
1/2 cup water
1/4 cup unsweetened coconut flakes (or shredded)
1/4 cup vanilla protein powder (about 12 grams) (I use Level-1)
pinch of salt
1/4 tsp. coconut extract
1/4 cup brown rice syrup *
1/4 cup coconut oil

Instructions:
  • Add 1/2 cup water to oats and let soak for about an hour, or until water is absorbed by oats. Once this is done, preheat oven to 350F.
  • Add wet oats with all other ingredients and mix well. Place in a well-greased (or parchment lined) bread pan; press and smooth out so that "dough" reaches all corners.
  • The edges will cook faster, so I made the "dough" a little concave in the middle to add more volume on the sides.
