Low-Carb Paleo Oxtail Stew

1 1/2 pounds oxtails, cut crosswise into 1.5-inch rounds
1 tablespoon grass-fed ghee or avocado oil
2 carrots, peeled and roughly chopped
1 celery stick, roughly chopped
1/2 tablespoon freshly ground coriander seeds
1/2 tablespoon freshly ground cumin seeds
1/2 tablespoon ground ginger
1/2 tablespoon chilli powder
1 teaspoon fenugreek
Few sprigs of thyme – leaves only

  • On the stovetop, heat a cast iron skillet or dutch oven on medium heat and add ghee or avocado oil. (You can do this step straight in your slow cooker if it has a saute function.)
  • Add carrot and celery, and soften for 5 minutes.
  • Add spices and herbs and stir to incorporate. Cook for an additional 30 seconds.
